My Orange Coleslaw

ED: I stumbled into the kitchen sleepily while my body which was on auto pilot steered to the fridge for breakfast. That’s when i saw my grandpa slicing cabbage and immediately my half asleep brain snapped awake and thought of coleslaw. I made coleslaw back at cooking school and i was amazed at how much it tasted like KFC’s coleslaw!! To me it was like discovering kryptonite! Its that easy to make and tastes so good! And by the way no I don’t eat coleslaw specifically for breakfast but i thought i could make it for dinner!

My Honey Lemon Mango Chicken Salad

ED: Hey guys! More yummy healthy recipes for everyone! This salad looks bright and colourful, and taste even better than it looks!

  • 2 Chicken Breast Diced
  • 1 Mango Diced
  • 1 Tomato Diced
  • 1/2 Onion Diced
  • 1 tsp Garlic Chopped
  • 1/2 a Lemon Sliced
  • Rocket Leaves (Aragula) – I didn’t have any :/
  • Parmesan Cheese
  • Chopped Chives

Dressing

  • 1/2 Lemon Juice
  • 2-3 tbs Honey
  • 1-2 tbs Red Wine/Sherry Vinegar
  • 4 tbs Extra Virgin Olive Oil
  • 1 tsp Djorn Mustard/Whole Grain Mustard Seeds(would be good)
  • Salt & Pepper
  1. Boil whole chicken breast in salted water till just cooked and leave it to cool.
  2. Cut mango, tomato, and lemon.
  3. Whisk all ingredients for dressing and taste and adjust to your liking (Amount of ingredients are estimated)
  4. Toss everything together and refrigerate to let flavours mix around mingle.
  5. Boom, out of the fridge and its done.

You could also add other ingredients such as prawns or crab, peppers, sauteed mushrooms just be creative (:

Mango, Avocado & Prawn Salad

Rach: Just a little something to share with you guys 🙂
I’ll just keep this short and sweet as I’m not that good with words. But it’s probably one of the best salads I’ve made and tried so far.

Key ingredients that you’ll need:
Mango – For that tangy sweetness (to complement the prawns).
Avocado – A good healthier substitute for mayonnaise for that creamy goodness.
Prawns – Adds some crunch to it… and you won’t feel like a total herbivore.
Butterhead lettuce, cherry tomatoes or whatever veg you like – You know… just so it actually feels and looks like a salad.
Olive oil dressing – I kept the dressing simple. Just some salt and pepper to season it, and you could also add a lil garlic to it for
that extra kick (you may strain the garlic out if you like. Think garlic-infused olive oil).
Lemon juice – For some acidity.
*You may also add chives or cilantro if you like!

Simple, with a burst of colors and flavors!

Japanese Style Prawn Salad

Japanese Style Prawn Salad

ED: When people think of prawn salads, they usually think about prawns and mayonnaise, so i thought I’d spice things up a little by adding a couple more ingredient to create a whole new dish. What inspired this dish was when i thought of using ebiko (prawn roe) and thought, why not make it a Japanese style salad? So i immediately thought of using wasabi for some heat, Japanese rice wine vinegar for some acidity and lemon juice to bring the salad to life. I then added a generous amount of ebiko, which are kinda like little mines triggered with each bite setting off mini explosions of salty fishy flavor which is absolutely delicious! To complete the salad i dressed the prawns and served it on a bed of leafs and Japanese cucumber and garnished it with some shredded seaweed and more ebiko. Tuna flakes would also be wonderful! Oishiii~

Christmas Party Dinner(more to come)

ED: Christmas! The best time of the year where everyone was busy shopping for gifts and groceries, preparing for thanks giving dinner like myself. To me, there is no dinner party more delightful than one with a chilly Christmas air stringed with carols, and the house filled with pretty candles as friends and family gather around the dining to appreciate the sight of a Christmas dinner feast. I prepared a homely seven dish spread that would surely bring joy to the world. (:

Caesar Salad

I love a great Caesar salad. I haven’t met anyone from this planet who hates Caesar salad, who would seriously? Its like the ultimate salad of salty satisfaction. Every mouthful hits the big red yummy button in my brain that sends me into a eating frenzy that wouldn’t stop till there’s no salad left. The refreshing crunch from the romaine, the saltiness from the Parmesan cheese, anchovies, gherkins and bacon which also gives that crispy contrast, are perfect together they’re like best friends playing in a pool of mayonnaise! I love it so much I’m gonna share this recipe with you guys you’ll be delighted how easy it is to make such a kick ass-salad!
