Rach: How this Kimchi Baked Rice came about was a mere thought. Few years ago I was craving for something savory, and the idea suddenly sparked… would cheese and Kimchi be a good combination? I could already imagine the taste somehow! I know i may already be getting weird stares from some of you, but when it comes to cheese, I’m pretty adventurous!
And so, putting my imagination to work, i grabbed some cooked rice, mixed in a little garlic and butter. Layed the Kimchi veggies across, and sprinkled some mozzarella and parmesan cheese over the top! This is the short-cut version. You could very well do this with Kimchi Fried Rice instead so that it’ll be more flavorful!
Bake at 180 degrees for 12-15 minutes and you could already be smelling the heavenly scent of melted cheese in your kitchen~ The slightly spicy and pickled taste from the Kimchi, and the savory goodness from the soft chewy cheese comes together and compliments each other. Hey, if ED says it’s good, then it must be good!
