My Orange Coleslaw

ED: I stumbled into the kitchen sleepily while my body which was on auto pilot steered to the fridge for breakfast. That’s when i saw my grandpa slicing cabbage and immediately my half asleep brain snapped awake and thought of coleslaw. I made coleslaw back at cooking school and i was amazed at how much it tasted like KFC’s coleslaw!! To me it was like discovering kryptonite! Its that easy to make and tastes so good! And by the way no I don’t eat coleslaw specifically for breakfast but i thought i could make it for dinner!

There are many variations of coleslaw which include other ingredients, such as red cabbage, pepper, onion, grated cheese, pineapple, or apple, mixed with a salad dressing such as mayonnaise. In the U.S. coleslaw often also contains buttermilk or mayonnaise substitutes, and carrot; although many regional variations exist, and recipes incorporating prepared mustard or vinegar are also common. Coleslaw is generally eaten as a side dish with foods such as barbecue, French fries, and fried chicken. It may also be used as a sandwich ingredient, and for hamburgers and hot dogs. Yum.

But the recipe I’m doing here is sorta my own take at it. So i stole a quarter of my grandpa’s sliced cabbage to make my coleslaw. (Okay i did ask grandpa politely of course) Here’s how we do it.

1. Combine the ingredients below and let them sit and socialise in the fridge for about 4-6  hours to let vinegar and orange infuse into cabbage and carrots.

  • 1/4 cup White Vinegar
  • 1/4 cup Japanese Rice Wine Vinegar (for sweetness)
  • Juice From 1 Sweet Orange
  • 1 tbs Extra Virgin Olive oil (Or veg oil)
  • 1/4 tsp Salt
  • 1 tbs Chopped White Onion
  • 3 Shredded Young Carrots/ 1/2 Big Carrot
  • 1/4 Shredded White Cabbage (You could mix red cabbage)

2. Drain the cabbage and carrots as dry as possible and toss with ingredients below

  • 3 tbs Mayonnaise
  • 1 tsp Worcester Sauce
  • 1 tsp Garlic Powder
  • 1/4 tsp Paprika
  • Crack Of Black Pepper
  • 1 Diced Peeled Orange
  • 1 tbs Chopped Spring Onion

3. DONE!?? YES IN JUST 2 EASY STEPS! 😀

*You could make this into a Japanese style coleslaw just by using Japanese mayonnaise instead and by throwing in some Japanese cucumber (:

* If you’re impatient to wait hours for vinegar to infuse into the veg, you could just add a tbs of vinegar into the dressing and eat it just like that its fine too though good things comes to those who wait (only to a certain extent) But still be patient! And as always be creative!
