Nachos and Magarita Night!

It’s Friday night and you have your buddies over to watch a match and celebrate TGIF with some booze. Problem is, you can’t cook to save your life, or your buddies from dying of hunger. Well there’s two solutions to this problem of which, one is to feed them more booze or the other is to assemble this “cooking-free” dish in 20 minutes. As fun as the first solution may sound I don’t think anyone could resist a Nacho platter; Thank God it’s Nachos and Magarita night!

Getting started

Serves 6 (as a snack)

Main Ingredients

  • 1  Bag of Chachos original tortilla chips
  • 80g Pepperoni (thinly sliced by the butcher)
  • 1 Chorizo sausage (sliced)
  • Some pre-sliced black olives
  •  1 Bottle of sliced jalapeno chilis
  • 1 Bottle of hot sauce
  • 150g of shredded cheddar cheese
  • Sour cream

Ingredients for Guacamole

  • 2 Avocados
  • 4 tbs of mayonnaise
  • 1 tbs of Extra virgin olive oil
  • 1/2 tsp garlic (finely chopped)
  • Pinch of salt and black pepper

Ingredients for Tomato Salsa

  • 4 Tomatoes (de-seeded and chopped)
  • 1/4 white onion (finely chopped)
  • 2 tbs Extra virgin olive oil
  • 1/2 tbs white vinegar
  • 1/2 tbs coriander (chopped)
  • Pinch of salt and black pepper

Preparation Instructions

  1. Preheat oven in convection or baking mode at 200 Degrees Celsius.
  2. Chop tomatoes, onions and coriander. Mix with Extra virgin olive oil, white vinegar, salt and pepper & refrigerate.
  3. Cut open the avocado, remove the seed and scoop out the flesh. Chop and mix with mayonnaise, garlic, Extra virgin olive oil, salt and pepper & refrigerate.
  4. Slice the chorizo thinly in about 3mm slices.

Assembling the Nacho platter

(Lay ingredients in a baking tray in the following order)

  1. Nachos
  2. Half of the sliced chorizo & pepperoni
  3. Some sliced jalapeno
  4. Some sliced olives
  5. Some Cheddar cheese
  6. Few splashes of hot sauce
  7. Repeat steps 1-6
  8. Bake in oven for 5 minutes till cheese has melted.
  9. Drizzle with sour cream and more hot sauce if desired and garnish with black olives.
  10. Serve with tomato salsa and guacamole.

I dare you, to eat just ONE. Oh I dare you.

Tips on how to cut open an avocado

To cut open the avocado, run your knife around the avocado, hold both sides and twist your wrist in opposite directions and it will split open exposing a huge nut like seed.
Use the back of the knife and strike the seed firmly. While holding the avocado half in one hand and the knife in the other, twist both hands in opposite directions. The seed should come loose if the back of the knife has penetrated the seed deeply enough.

A quick and easy Margarita to enjoy along side the Nacho platter!

  • 1 1/2 oz Tequila
  • 1/2 Ozpremium triple sec (preferably Cointreau)
  • 1 oz Lime juice
  1. Rub the rim of a cocktail glass with a lime wedge, and dip in salt.
  2. Shake all ingredients with ice, strain into the glass, and serve.

  1. I have had nachos before, but the fact that you used chorizo and pepperoni has really got my interest! The tex mex places around here have just your typical beef or chicken. I definitely will need to try this version-yum!

    • ED: thanks! well i thought i could add more Mexican flavors in it (: its really good with jalapeno! In fact I just thought of it we could try making jalapeno salsa to go with the nachos! (:
