ED: Old Airport Road Hawker Center is one of the timeless heritage of Singapore food. It’s a treasure chest of local delights, and in it, lies a gem, Blanco Court Kway Chap. Hands down one of the best if not the best kway chap ever! So be prepared for a lonnggggg queue. The quality of the meat and offal served is simply unbeatable.
They painstakingly prepare the pig’s intestines, stomach, skin and meat so clean that you can be sure you’ll never find a strand of pork hair on the silky smooth giggly pork skin. The meat and offal are fresh and clean. The “chap” black sauce is like this secret sauce which is so delicious. Imagine the tao pok soaking up all that deliciousness! Another important factor for a good kway chap to me is the chili dipping sauce! It has to be spicy enough, with the right balance of sourness from the lime, and needless to say they got their chili right. However their soup is more to the bland side, but that may not necessarily be a bad thing as you could add their sauce into the soup to make it super tasty! Along with a little chili, its really a porky soup for the soul.
